4 slices thick cut bacon, diced
1 medium shallot, diced
4 cups cleaned, pared and halved brussels sprouts
1 tablespoon honey
dash of orange extract
2 tablespoons salted butter

Directions:
Directions:
In a non-stick or well-seasoned pan, over medium-high heat, sauté the bacon until the pieces don't stick together, and begin crisping at the edges. Throw in the shallot. Cook until bacon is crispy and shallots are tender. Remove to a bowl.

Without wiping the pan, add butter to melt, then add in the Brussels sprouts. Cook, tossing frequently, until they are browned and tender throughout.

Near the end of the Brussels sprouts cooking time, melt the honey in a small microwavable bowl for ten seconds--just long enough to thin it. Add in a few dashes of the liquid smoke (a little goes a long way), and a dash of orange extract. Mix it up.

When the sprouts are done cooking, remove from heat, and drizzle the honey mixture over it to taste. Don't feel you have to use all of it. Add the bacon, shallots and toss to combine.
