3 eggs
2 cups chicken stock (preferably from a fresh roasted chicken)
1/2 cup chopped onion
1/2 cup chopped celery
1/2 stick melted butter
1 tsp salt
1/2 tsp ground white pepper
6 corn bread muffins (or one small pan of cornbread)
6 slices toasted or day old bread

preheat oven to 350º

Grease a 2 quart baking dish. In a mixing owl, beat eggs, then add stock, onions celery, butter, salt and pepper When combined, crumble in muffins and bread. Pour into baking dish and let sit 30 minutes. Then bake for 30 minutes or until edges are brown . Serve with gravy.
