1 cup flour
1 cup water
1/4 tsp salt
4 eggs

Ricotta filling:
2 lbs ricotta
3 eggs
1/2 tsp salt
1/4 cup grated cheese
parsley
pepper

Directions:

Pancakes:
Beat until smooth, then add 4 eggs one at a time.
Grease griddle lightly with olive oil(350º) and place by tbsp. Do not brown.
Cook on each side.(Surface will appear dry).

Filling:
Beat good. Place tbsp on each manicotti.
Place tomato sauce on bottom of 9x13 pan. Single layer each filled pancake on sauce. Cover pan with foil. Bake at 350º for 30 min.
