1 T Butter
2 T Olive Oil
1 large Onion minced
1 clove Garlic minced
1 lb dried Black Beans picked over
1 Ham Bone or 1/2 lb chopped smoked Ham
1 t Lemon Thyme or Thyme
1 Bay Leaf
1 qt Chicken Stock
1 qt Water
1/2 c Brown Rice
1 Lemon juiced & zested
Salt & Pepper to taste
Chopped fresh chives to garnish

Heat butter and oil in large pot over medium heat. Add onion and cook 1 minute, add garlic and cook 5 minutes. Stir in black eyed peas, ham, thyme, bay leaf, chicken stock and water. Heat to boiling and reduce heat and simmer partially covered 1 hour. Stir in rice to soup and continue to cook until rice and peas are tender, about 30 minutes, add more stock if too thick. Stir in lemon juice and zest. Add salt and pepper to taste, garnish with chives.
