1/2 c. sugar
1 can crushed pineapple (drained well)
1 c. hot water
2 - 3oz packages of apricot jello
2 c. cold water
8 oz. cream cheese
1 c. chopped pecans
1 c. grated carrots
16 oz. whipped topping

Directions:
Directions:
Dissolve jello in hot water. Add sugar and cream cheese. Beat until foamy. Add pineapple, cold water, carrots and pecans. Let thicken in refrigerator. Add whipped topping and mix until fluffy.
