4 slices toast
1 clove garlic cut in half
1/4 c parmesan cheese
4 thin slices cooked chicken
4 thin slices cooked ham
2 tbsp. butter
2 tbsp. flour
1/2 tsp salt
dash pepper
1 c light cream
2 egg yolks
1/4 c fine dry bread crumbs
1/4 c grated parmesan cheese

Heat oven to 350º. Lightly butter an 8" square baking pan. Trim crusts from toast and rub each slice with a cut side of garlic clove. Line bottom of baking pan with toast slices. Sprinkle with 1/4 c parmesan cheese and top each piece of toast with a slice of chicken and a slice of ham. Melt butter in small saucepan and sprinkle in flour, salt and pepper. Let bubble up and remove from heat. Add cream all at once stirring to blend. Return to moderate heat and cook and stir until thick and smooth. Beat egg yolks lightly and stir at least half of hot sauce gradually into them. Return to saucepan and bring just to a boil. Pour sauce over chicken and ham. Combine bread crumbs and 1/4 c parmesan cheese and sprinkle over all. Bake about 20 min or until lightly browned and bubbling. Serve hot.
