German Style Spareribs Recipe

1 1/2 lb spareribs
salt, freshly ground pepper

Potato Dressing
2 c chopped onions
2 tbsp. oil
4 c chopped cooked potatoes
1 1/2 tsp salt
1 tsp pepper
1 1/2 tsp sage
1/2 to 3/4 c melted butter

Directions:
Directions:
Using one whole rack of spareribs, cut the ribs in half lengthwise. Rub ribs all over with salt and pepper. Place one half of the spareribs on rack in shallow roasting pan rib ends up. Spoon potato dressing on bottom set of ribs. Cover dressing with other half of the spareribs, rib ends down, then secure the two sets of ribs together with cord and/or skewers. Bake covered 325º for 1 hour. Uncover and bake 45 min longer or until the juice of the spareribs is no longer pink.

Potato Dressing:
Saute the onions in oil until shiny. In large mixing bowl combine sautéed onions with the potatoes. Season with salt, pepper and sage. Slowly pour the melted butter over the potatoes and mix lightly.
