1 c. sugar
1 1/2 c. milk, scalded
2 Tbs. butter
5 Tbs. lemon juice
3 egg yolks, beaten
1 Tbs. grated lemon rind
1/4 c. flour
3 egg whites, stiffly beaten
1/8 tsp. salt

Directions:
Directions:
Cream together sugar and butter. Add egg yolks. Beat in flour and salt. Add milk. Stir in lemon juice and rind. Fold in egg whites. Pour into custard cups. Bake at 375º for 10 minutes, then reduce heat to 350º. Bake for 35 minutes longer or until toothpick placed into center comes out dry.
