2 cups raw cashews
1 tbsp. cacao nibs (optional)
1/2 cup honey
1 tsp vanilla extract
1/4 cup coconut oil
3/4 cup cocoa powder

Directions:
Directions:
In a food processor, blend cashews and cacao nibs (if using) into fine crumbs.
Add remaining ingredients and blend until combined.
Grease your hands with coconut oil and roll tablespoons of the mixture in your hands to form balls. Place the balls on a baking sheet lined with parchment paper.
Bake at 200F for 1 hour, then transfer to a rack to cool.
Makes 24 cookies
