2 cans (14 oz) chicken broth
1/2 c water
1 bag of coleslaw
5 medium potatoes, peeled and diced
5 stalks celery, sliced
2 carrots, diced
1 medium onion, chopped
5 tbsp. butter or margarine
5 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c light cream or half-and-half
1 c milk
1/4 tsp. dried thyme
2 c fully-cooked diced ham

Directions:

In large kettle, combine broth, water, coleslaw, potatoes, celery, carrots and onion; bring to a boil. Reduce heat; simmer covered 25 minutes or less until vegetables are tender. Do not drain. Meanwhile, melt butter in medium saucepan. Add flour, salt, and pepper; stir to form a smooth paste. Combine cream and milk; gradually add to four mixture, stirring constantly. Cook and stir until thick; cook one minute longer. Gradually stir milk mixture into vegetables. Add thyme and ham; heat through. Garnish with parsley if desired.
