2 qts water
2 qts apple juice
2 cups kosher salt
3/4 cup sugar
1 T black peppercorns
1 T (approx) thyme
1-2 T (approx) sage
1 large sprig rosemary

Directions:
Directions:
Heal all ingredients until herbs are soft and salt/sugar dissolves. Cool.

After brine cools, add 1 gallon ice water to mixture in a large insulated water cooler or a large bucket with lid (like a pickle bucket from Fire House Subs).
Soak turkey in brine overnight in a cool place.

The next day, grill the turkey in an aluminum pan on a charcoal grill (indirect heat) with mesquite chips.
