2 to 3 cups canned asparagus
1 tsp. salt
1/8 tsp. pepper
1 pimento cut into small pieces
3 slightly beaten eggs
1 cup grated American cheese
1 1/4 cups finely rolled cracker crumbs
1 cup milk
1 cup melted butter

Directions:
Directions:
Arrange asparagus in an oiled casserole dish.
Combine all other ingredients except butter. Mix and pour over asparagus.
Pour butter over top. Bake uncovered at 350 degrees for 30 minutes.

This was another of Mother's methods of getting the children to eat veggies. I still love asparagus, and I remember this dish fondly from our holiday meals.
