1-1/2 c cornmeal
2/3 c all purpose flour
2 t baking powder
1-1/2 t salt
1/2 - 3/4 c finely chopped onion
2/3 c milk
4 eggs beaten
4 T unsalted butter

Optional:
dill spices
1 small can crabmeat
1/2 can of kernel corn drained

Directions:

Grease muffin tins with oil.

In medium bowl, combine dry ingredients.

In separate bowl, mix onion, milk, eggs, and butter. Fold into dry flour mixture until just moistened. Spoon into muffin cups. Bake 450º for 10 - 12 minutes or until brown.
