1 lb veal cutlets, each cut 1/4" thick
1/4 c flour
1/2 tsp salt
1/4 tsp pepper
1/4 c butter
2 c mushrooms
1/4 c sliced green onion
1/2 c chicken broth
1/2 c white wine
1 c light cream

Directions:
Directions:
With meat mallet pound cutlets to 1/8" thickness. On wax paper mix flour, salt and pepper. Coat cutlets with this mixture. In 10" skillet over medium high heat in hot butter cook cutlets a few at a time until slightly browned on both sides removing pieces as they brown. Reduce heat to low and stir mushrooms into drippings and cook until mushrooms have lost their moisture and are golden brown. Add green onions and cook about 1 min more. Stir in chicken broth and wine scraping to loosen brown bits. Cook until broth and wine are reduced to about 1/2 c. Stir in cream and add veal. Heat together but do no boil.
