Turkey "Fatty" Recipe

Ingredients: 1 (3lb) boneless turkey breast. 1/2 stick of unsalted butter (softened) 1 tablespoon of roasted garlic. (Minced) 1 teaspoon of dried basil. Crushed 1 teaspoon of dried sage OPTION: You can substitute the dry herbs with 2 teaspoons of McCormick brand "Poultry Seasoning" Salt & Pepper to taste 1 (10oz) package of frozen chopped spinach 1/2 cup of shredded provolone cheese 1 lb thin sliced bacon.

Directions:Thaw the spinach, squeeze as much of the water out of it as possible. I chop it one more time to assure there are no large leaves in the package. Set aside.
Place your turkey breast skin side down on your work surface. Trim any excess fat if necessary. Stretch out the skin as much as possible. The idea is to get it to wrap around the breast after stuffing it. Season with salt & pepper to taste.
In a bowl, mix the butter, garlic, & herbs. Take this compound butter and spread or rub all over the inside of the breast. Place the spinach down the center of the breast and top the spinach with the cheese.
Being careful not to tear the skin, make a roll. Lay out your bacon strips slightly overlapping them, or you can weave strips of bacon like we did in my bacon "fatty" recipe. Place the turkey on the bacon and roll.
Place your turkey roll on rack in a roasting pan. Set up your grill for indirect heat to 450-475 degrees F. Place the roll directly on the grate and Grill with the grill lid closed.
The turkey roll is done when the internal temperature reaches 170 degrees F and the bacon is crisp. Remove from the grill and let rest for 10 minutes before slicing and serving. I like serving this with some roasted potatoes. Your veggie is already taken care of.
I don't add smoke to this recipe because I think it overpowers the spinach, but you can certainly use some if you wanted. Change up the filling. Try sausage and stuffing or ham, cheddar & jalapeņo.

Notes: Like most of you, The Big Guy believes that bacon makes everything better. What's not to love about bacon wrapped turkey just on its own?
But let's take it to the next level...Go Big Guy or go home, right? You can stuff the turkey breast with just about anything you want. I like to stuff mine with spinach and provolone cheese, or smoky Virginia ham and cheddar, or crumbled bacon, cheddar and jalapeņo. It's up to you. You can make this on the grill, smoker, or in a cast iron Dutch oven. Here is my basic recipe.
