2 lb package frozen Ore-IdaŠ Potatoes, thawed
1 cup diced Onion
1 can Cream of Chicken Soup
16 oz container Sour Cream
1 stick Margarine, melted
12 oz package grated Sharp Cheddar Cheese
˝ tsp Salt
˝ tsp Pepper

Directions:
Directions:
In a large bowl, combine all ingredients. Place mixture into a greased 9 x 13 baking pan and cover with foil. Bake in a 350 °F oven for 1 ˝ hours. Remove foil for last 15 minutes of cooking.

This is not one of mom's recipes, but she made one very similar to it. I like it because it is quick and easy to make. It's great for potluck dinners. I have never taken it to a dinner party that I didn't come home with an empty pan.
