3 T butter
2 T flour
1 - 1 1/2 teas salt
1/4 - 1/2 teas pepper
1 1/2 c milk
5 medium red potatoes sliced thin
1 pkg all beef hot dogs, halved lengthwise & cut 1/2"
1 medium chopped onion
1/3 c cheddar cheese, shredded

In saucepan, melt butter. Stir in flour, salt & pepper, cook till smooth. Gradually add milk. Boil, cook & stir 2 minutes till thick. Grease 2 1/2 qt casserole dish, layer 1/3 potatoes, 1/2 hot dogs, 1/2 onions. Repeat layer, top with remaining potatoes. Pour white sauce over all.
Cover, bake at 350º for 1 hours. Uncover, sprinkle with cheese, bake 10 minutes.

Great dish for a pot luck, for kids and kids at heart. Every now and then you just have to have a hot dog. I noted that this was not only excellent it was easy.
