Chicken or Pheasant Paprikash Recipe

Paprikash
One 2.5-3 lb.chicken
3T. butter
1c. chopped onions
2t paprika
2 chicken bouillon cubes
2c. boiling water
1tsp. salt
1tsp. flour
1c. sour cream

Galuska Noodles
3 1/4 c flour
3 eggs
2T. butter
1 cup water
1 tsp. salt

Directions:
Directions:
1. Wash and clean chicken (or pheasant) and cut into desired serving pieces.
2. Melt butter in Dutch oven
3. Add onions, sauté until browned.
4. Dissolve paprika, bouillon cubes and salt in boiling water
5. Bring to boil and add chicken
6. Cover and cook over low heat about 1 hour or until chicken is tender.
7. Stir flour into sour cream.
8. Pour slowly into liquid in pot and stir spoon over chicken
9. Cover and cook 5 minutes longer.


Galuska Noodles
1. In a large bowl combine flour, eggs, 1 tsp. salt & 1c. water. Beat ingredients together.
2. In a 4 quart stock pot bring 2 quarts of water and 2 tsp. of salt to a boil.
3. To shave Galuska: Spread a thin layer of dough (about 2 tsp.) on a cutting board (bread board) Then hold over boiling water. With a moistened knife, cut off small pieces making sure to dip the knife into the water each time.Continue until 1/4 of the dough is used.
4. Boil gently uncovered until Galuska are firm and rise to the top of the water. Remove with a slotted spoon and place in a strainer. Quickly rinse with hot water and drain. Place in buttered casserole and keep warm in a 300º (F) oven. Repeat until all dough is used. Toss with butter. (Makes 6 servings)

Serve by putting noodles in a soup bowl and pouring the soup with the chicken over it. This can be multiplied by 2 or 3. Pheasant is a great substitute for chicken
