3 Tbsp butter
2 large cloves garlic, minced
2 oz prosciutto (omit if vegetarian)
1 28 oz can Italian peeled tomatoes, coarsely chopped
1/2 tsp crushed red pepper
1/2 cup heavy cream
1/4 cup vodka
Salt to taste
1 lb penne

Directions:

In a large skillet, melt butter over med heat. Add garlic and cook until golden, stir in prosciutto and cook 1 min.

Add tomatoes and crushed pepper and simmer 5 minutes. Stir in cream and cook for 1 minute. Add vodka and cook 2 minutes. Season with salt.

Meanwhile, bring 4 quarts of water to a boil. Add the pasta and salt to taste. Cook, stirring frequently until penne is al dente. Drain pasta and reserve some of the cooking water.

Add the pasta to the skillet with the sauce and toss pasta until coated. Add a little reserved cooking water if the sauce seems too thick.
