3 -1/4 oz. packages dry yeast
3/4 C sugar
1 C warm water (105 - 115 degrees)
8 C flour
2 C milk
2 C butter, melted
2 eggs, beaten
1 t salt
Filling (apricot, poppy seed, raspberry, cream cheese/sugar/vanilla)

Preheat oven to 375º.
Dissolve yeast and 1 T sugar in warm water in large bowl.
Add 1 C flour, and stir well.
Cover and let rise in a warm place, free from drafts, 1 hour or until doubled in bulk,
Scald milk; let cool to warm (10-115 degrees).
Stir yeast mixture down; add milk, butter, eggs and salt, stirring well.
Add enough remaining flour to make a soft dough.
Cover and repeat rising procedure, for 1 hour or until doubled in bulk.
Punch dough down, let rise 5 minutes.
Turn out onto a floured surface, and roll to 1/2 inch thickness.
Cut with a 2 1/2 inch biscuit cutter. (a drinking glass works well as a cutter).
Place on lightly greased baking sheets.
Make indentation in the center of each roll using thumb.
Fill indentation with 1 t of desired filling.
Cover and repeat rising procedure for 30-45 minutes or until doubled in bulk.
Bake at 375º for 20 minutes or until brown
