6 large red potatoes
1 large onion, chopped
1 pound bacon
3/4 C white vinegar
1/2 C sugar
1 t salt
1 t pepper
2-3 T celery seed

Directions:
Directions:
Boil potatoes, cool and peel.
Dice raw bacon and sauté in pan until crisp.
Remove bacon from pan with a slotted spoon and drain on paper towel.
Reserve the bacon drippings.
Add vinegar, sugar, salt and pepper to bacon drippings and simmer until sugar has dissolved.
Slice potatoes and place into a serving bowl.
Add onions and vinegar/sugar mixture to potatoes.
Mix carefully.
Add bacon and celery seed and mix one more time, carefully.

May be served hot or cold.
Will keep in the refrigerator for over two weeks.
