Ingredients:  
1 small tomato, finely chopped
(or 1 can Rotel tomatoes, drained)
1/2 cup mayo
1/2 cup real bacon bits (or 8 slices cooked bacon, crumbled)
1 small onion, finely chopped
1 tsp dried basil
1/2 cup shredded Swiss, Cheddar or Italian Cheese
1 (12 oz) tube buttermilk or flaky biscuits

Directions:

Preheat oven to 450 F. In a large bowl, combine all ingredients except the biscuits, and set aside. Split each biscuit into 2 or 3 layers and press each layer into a muffin tin. Spoon mixture into cups. Bake for 8 to to 10 minutes until golden brown.
