8 slices Bacon, cut into 1-inch pieces

4 carrots, peeled, sliced

2 stalks celery, sliced

1 onion, chopped

2- 1/2 qt. (10 cups) water

1 pkg. (16 oz.) dried split peas

1 bay leaf

1 tsp. dried thyme leaves

1/2 tsp. ground black pepper

1/4 cup Dijon Mustard

COOK and stir bacon in large saucepan until crisp. Use slotted spoon to remove bacon from pan; drain on paper towels.

ADD carrots, celery and onions to reserved drippings in pan; cook 5 min. or until crisp-tender, stirring frequently. Add all remaining ingredients except mustard; stir. Bring to boil; cover. Simmer on low heat 1-1/2 to 2 hours or until peas are tender, stirring occasionally.

REMOVE and discard bay leaf from soup. Stir in mustard and bacon.
