1 tsp Olive Oil
1 Head Garlic
1 Small Potato
1/2 Sweet Onion
1 tsp dried Crushed Thyme
1 tsp dried Crushed Rosemary
1 pinch of Sea Salt

Directions:
Directions:
Peel and cut garlic cloves in halves or thirds. Cut the onion into slices then cut the slices in half. Cut the potato (unpeeled is fine) into very small cubes. Heat the oil in a fry pan. Add onion and potato cubes. Cook stirring frequently until onion is soft then add the garlic pieces, thyme, rosemary and sea salt.. Continue cooking and stirring until the potatoes can be pierced with a fork.

Yellow Potatoes are softer and more buttery flavored than russet potatoes. They are also one of the few potatoes I do not have an allergic response to.
