2 1/2 pounds boneless chuck short ribs
1/2 cup all-purpose flour
1 Tbsp. coarse salt
1 Tbsp. black pepper
2 Tbsp. olive oil, divided
2 carrots, cut into 1/4 inch dice
2 celery stalks, cut into 1/4 inch dice
3 garlic cloves, minced
3 bay leaves
1/3 cup dry red wine
1/3 cup crushed tomatoes
1/3 cup balsamic vinegar
2 tsp. minced fresh thyme leaves or 3/4 tsp. dried thyme

Combine flour, salt and pepper. Drizzle ribs with1 Tbsp. olive oil and dredge in flour mixture.

Heat 1 Tbsp. olive oil in large skillet; Cooks ribs until browned and have a nice crust. Don't rush the process. Transfer ribs to a slow cooker; add carrots, celery, onion, garlic and bay leaves.

Combine wine, crushed tomatoes, vinegar and thyme in a small bowl. Season with salt and pepper. Pour mixture into slow cooker. Cover and cook on low 8 - 9 hours or on high 5 1/2 - 6 hours, turning once or twice, until meat is tender and falling off the bone.

Remove ribs from the slow cooker. Process sauce in a blender to desired consistency. To serve, pour sauce over ribs. Serve with mashed potatoes or polenta.
