1 can whole chilies
1 pound Monterey Jack cheese
1/2 pound grated cheddar cheese
5 large eggs
1/4 C flour
1 1/4 C milk
1/2 t salt, pepper and paprika

Directions:
Directions:
Preheat oven to 350º.
Wash, split and deseed peppers and dry on a paper towel.
Cut Monterey jack cheese into 12" x 2" pieces.
Stuff cheese into peppers.
Place in greased baking dish.
Cover with the grated cheese.
Beat eggs, flour, milk, salt, pepper and paprika.
Pour over peppers and cheese.
Bake at 350º for 45 minutes or until bubbly and brown.
