Florentine Sole Almondine Recipe

2 pounds fillet of sole
2 t salt
6 T melted butter
2 t lemon juice
2 T chopped onions
4 T flour
2 C milk
1/4 t crumbled basil
1 1/2 C shopped frozen spinach, well drained
2/3 C slivered almonds

Directions:
Directions:
Preheat oven to 350º.
Sprinkle fish with 1/2 t salt.
Combine 2 T butter with lemon juice and brush some over the fish.
Roll up fillets and arrange in a baking dish.
Drizzle with the rest of the butter/lemon mixture.
Melt the rest of the butter in a pan and sauté the onion in the butter.
Stir in flour, gradually add milk.
Cook until thickened.
Stir in spinach and 1/2 of the almonds.
Spoon over fish rolls.
Sprinkle with the remaining almonds.
Bake at 350º for 25 minutes.
