2 pounds scallops
Butter
2 small green peppers, chopped
1/2 C chopped white leeks
1/3 C sherry
1/4 C flour
2 C milk
salt, pepper, cayenne pepper, paprika

Directions:
Directions:
Wash and drain scallops.
Melt 1/3 C butter in skillet.
Saute green peppers and leeks until leeks are golden.
Add scallops and sherry and simmer for 10 minutes.
In a separate pan, melt 1/4 C butter and stir in flour.
Gradually add milk and cook over low heat until smooth and thick.
Add salt, pepper and cayenne.
Add sauce to scallops and simmer for 5 minutes.
Sprinkle with paprika and serve over rice.
