Ingredients: 2 cups flour Jane's Mixed up Salt or just salt & pepper to taste 2 eggs 1/4 cup or less of milk or butter oil

Directions:Get a clean large brown paper bag. Place flour and seasoning in the bag. Mix eggs and 1/4 cup or less of milk or butter - milk slightly beaten and in a dish that will allow chicken breast to get fully coated with mixture. Drop pieces into paper bag and close tightly and shake, shake, shake until all pieces are evenly coated. Frying pan and oil should be hot so that drops of water in the oil will bubble. (Of course, use pure vegetable oil.) All pieces that will fit loosely in pan, cover and turn the heat down to 300º F or medium to low. Cook for about 15 minutes until pieces are starting to brown then remove lid and cook until golden brown and crispy. Drain well on paper towels. (If you put brown bags under the paper towels it will help the clean up part.) |

Notes: One of our Tom's favorite recipes - God Love Him. When we were stationed in Florida and Tom was in Kansas, the phone rang and when I answered, he said, "Well, I have six chicken breasts, now what do I do next?" Anytime you went to Tom's for dinner in his bachelor days you ate fried chicken. It was delicious and tasted exactly like his Mom's!
