1&1/2 C. sugar
1/2 C. shortening
2 Tbsp. water
2 Tbsp. red food coloring
1 C. buttermilk
1 tsp. Baking soda
2 C. flour
2 Tbsp. cocoa
1 tsp. salt
2 eggs
1 tsp. vanilla
1 Tbsp. vinegar

Directions:
Directions:
Combine sugar, shortening, soda, flour, cocoa, & salt. Combine water, coloring, & 2/3 C. buttermilk. Add to first. Beat well. Add eggs, remainder of buttermilk, vanilla & vinegar. Beat a lot. Pour into prepared 9x13 pan.
Bake 30 minutes at 350º Check center with toothpick. Cool on rack.
Frost with Waldorf Astoria Frosting. Recipe included in this cookbook.

I got this from Mary Jean Welk, who had received it from her sister-in-law, Judy Welk Johnson. When I asked how long 'beat a lot' was, she said she had asked that of Judy, and Judy replied, "Beat the shit out of it!" This is a delicious cake, especially with the frosting, and topped with flaked coconut.
