Basic Blueberry Muffins Recipe

8 C flour
1 T. baking powder
2 t baking soda
2 t salt
3 C sugar
1 1/4 C canola oil
4 eggs, slightly beaten
1 T vanilla
4 C buttermilk
6 1/2 C blueberries (frozen or fresh)

Directions:
Directions:
Sift the dry ingredients together. Combine all the wet ingredients except the blueberries, which should be added at the end, and mix into the dry. The consistency of the batter should be thick, like that of ice cream or frozen yogurt from a soft serve machine. Add the blueberries and fill prepared muffin pans above the rim of the cups. Bake at 350º for 30 minutes (this is longer than other muffins need) to allow the blueberries to set.
