3 C flour
1 C sugar
1/2 C unsweetened cocoa powder
2 t. baking soda
1 t salt
1 C apple juice
1/2 C water
1/2 C belted butter or margarine
2 T mild vinegar
2 t. vanilla extract
1 C semi-sweet chocolate. chips

Directions:
Directions:
In a large mixing bowl sift flour, sugar, cocoa, baking soda, and salt. Mix thoroughly to blend and make a well in center. In a separate bowl, whisk apple juice, water, butter, vinegar, and vanilla extract. Pour all at once into flour mixture and stir just until flour is moistened. Do not over mix. Gently fold in chocolate chips. Spoon into muffin pan coated with nonstick cooking spray. Bake at 375º for about 15-20 minutes or until test toothpick inserted in centers comes out clean. Cool in pan for 15 minutes.
