Grandmother C's Rhubarb Bars Recipe

3 C Rhubarb cut fine
1 1/2 C sugar
2 T cornstarch dissolved in small amount water
1 t vanilla
few drops red food coloring
Crust:
1 1/2 C oatmeal
1 C shortening
1 1/2 C flour
1 C brown sugar
1/2 t soda
1/2 C chopped nuts

Directions:
Directions:
Mix together the crust ingredients, and press 3/4 of the mixture into a 9x12 pan.
Cook the rhubarb and sugar with 1/2 C water Add the cornstarch, dissolved in small amount of water and cook until thickened. Add vanilla and food coloring.
Put the rhubarb mixture on top. Crumble the rest of the crust mixture over top. Bake at 375º for 20 minutes.
