5-6 nice size sweet potatoes
Cooking oil
1/2 c. butter
1 tsp. each cinnamon, ground ginger
1 c. brown sugar or a little more if needed
1 tsp. vanilla
1/4 c. pineapple juice
Directions:
Directions:
Wash, dry and bake potatoes until soft
While potatoes are baking
Mix together brown sugar and spices
Mix vanilla with pineapple juice
Remove from oven and cut in half lengthwise
Open potatoes a little
Drizzle melted butter, vanilla and pineapple juice
Sprinkle brown sugar and spices
Place potatoes on baking sheet
Bake for another 15-20 mins. or until topping is crunchy on top.
