Ingredients:  
Prepare 2-3 large colored peppers cut in half and then quartered.

1/2 c. of crumbled feta cheese

fresh parsley and 1 tsp.lemon juice

Combine:
2 tsp. olive oil
1 minced garlic clove
1/2 tsp. (or more) oregano
1/4 tsp. lemon zest (or use lemon pepper)
pinch of salt & pepper

Directions:
Directions:
Toss peppers with combined oil etc. ingredients in 3 litre (12 c.) baking dish - oblong is best.

Sprinkle with 1/2 c. of crumbled feta cheese.

Bake at 425º for about 20 mins.

Sprinkle with fresh parsley if available and drizzle 1 tsp. lemon juice
