1 lb link sausages
1 onion chopped
1 clove garlic minced
1 large sweet green pepper
1 sweet red pepper
4 medium tomatoes coarsely chopped or canned (19 oz) tomatoes. Simmer a little longer until liquid reduces
1 tbsp. chopped fresh basil or 1 tsp dried chopped fresh parsley
Salt and pepper

In a large skillet cook sausages over medium high heat until brown on all sides. Drain off excess oil. Add onion and garlic and cook for 1 to 2 min. Seed and cut peppers into strips. Stir into skillet with tomatoes and basil. Simmer uncovered until sausages are cooked, about 15 min stirring occasionally. Fresh tomatoes, green and red peppers go well with spicy sausages. Serve with rice or buttered noodles. Especially good with fresh basil.
