Microwave Chimichangas Recipe

5 (8-inch) flour tortillas
vegetable oil
3/4 cup refried beans
1/3 cup enchilada sauce
1/2 cup shredded cheddar cheese
shredded lettuce
chopped tomato
sour cream

Directions:
Directions:
Rub both sides of each tortilla with oil. Stack the tortillas and wrap the stack in wax paper. Microwave the tortillas on high for 50 seconds.
Fill a tortilla with 2 Tablespoons of beans, 1 Tablespoon of sauce, and a sprinkle of cheese. Fold the bottom end up, roll the sides in, and fold down the top. Brush the chimichanga with vegetable oil. Repeat the procedure for each tortilla.
Microwave a microwave-safe browning dish on high for 4 minutes. When the dish is hot, place the chimichangas in it. Cook them on high for 4 minutes. Turn each chimichanga over after 2 minutes.
When chimichangas are finished cooking, serve them with lettuce, tomatoes, and sour cream.
