1 (30 oz.) jar spaghetti sauce
1 (16 oz.) can whole tomatoes
1 clove garlic, minced
2 cups cottage cheese
1 cup ricotta cheese
3 Tbsp. Parmesan cheese
2 egg whites
4 Tbsp parsley, chopped
1 (8 oz.) box manicotti shells
1 cup water

Preheat oven to 450. Combine spaghetti sauce, tomatoes (broken up), and garlic. Fill bottom of a 9 x 12-inch casserole dish with 2 cups tomato mixture. Set aside remaining mixture.
Combine cheeses, egg whites, and parsley; stuff uncooked manicotti shells using a small spatula. Arrange stuffed shells in a single layer over the sauce, side by side. Cover shells with remaining 3 cups sauce; pour water over sauce. (Don’t be concerned about the watery appearance, it will be absorbed during the cooking process.) Cover dish with foil and bake for 50 minutes. Remove foil and bake another 10 minutes.
