2-15 oz cans Red Kidney Beans, drained and rinsed
1 tbsp Olive Oil
1 lb Turkey Kielbasa, cut into ¼ inch thick rounds
1 cup Onion, chopped
2 Celery stalks, chopped
2 Garlic Cloves, minced
2 cups Chicken Broth
2 tbsp fresh Parsley, chopped
¾ tsp Salt
1 ½ tsp Hot Sauce
4 cups cooked White Rice

Directions:
Directions:
Heat oil in a Dutch-oven over medium heat. Cook Kielbasa until browned on both sides. Add onion, celery and garlic. Cook until tender. Add beans, chicken broth and enough water to cover by 2 inches. Add parsley, salt and hot sauce. Simmer for 1 hour or until liquid has reduced to a thick sauce. Serve over hot rice.

Another great Louisiana-style dish. Make a beer-butt chicken rubbed with Cajun seasoning and have this dish as a side.
