2 to 2 1/2 lbs pork tenderloin cut in 1 " cubes
2 tomatoes quartered
2 onions peeled cut into 1" thick wedges
2 sweet green peppers cut in 1" squares

Marinade:
1/4 c olive oil
Juice of 1 lemon
1 tbsp chopped fresh oregano or 1 tsp dried oregano
1 clove garlic minced
Salt and pepper to taste

Place pork pieces in shallow glass dish. Blend marinade ingredients and pour over pork stirring to coat. Marinate covered at least 1 hour or overnight in refrigerator turning pork occasionally. If you marinate the meat overnight you can quickly grill the skewered meat at dinnertime. Remove pork from marinade with slotted spoon. Reserve marinade for basting discarding garlic. Place pork on skewers, alternating 1 pork cube with 1 piece each of tomato, onion, green pepper and then another pork cube. Grill over medium hot coals or cook on broiler rack turning often and basting with marinade frequently until pork is cooked (no longer pink but juicy) about 7 to 10 min. Serve with rice.
