1 3/4 c cubed cooked pork
1 tbsp butter
1 small onion chopped
1 c canned tomatoes
3/4 c uncooked minute rice
1 c pork or chicken stock
1 green pepper chopped
1 tsp salt
1/4 tsp pepper
4 slices side bacon (optional)
Parmesan cheese (optional)

Directions:

Fry bacon, pat dry, chop finely and set aside. Melt butter in large skillet. Saute onion and green pepper until shiny and then add tomatoes, rice, pork stock, salt and pepper. Bring slowly to a boil. Add cubed pork and transfer to a casserole. Sprinkle the bacon bits and parmesan cheese on top of casserole (optional). Bake covered in a 350º oven for 30 to 45 min or until most of the liquid had been absorbed and the rice is tender.
