1 1/2 lb pork tenderloin cut in 1" cubes
8 mushroom caps
4 slices side bacon - each slice cut into 4 pieces
2 green peppers cut in 1" squares
1/4 c melted butter
1/2 c dry bread crumbs
1/4 tsp seasoned salt
1/2 tsp fresh parsley finely chopped

With sharp knife cut the tenderloin into 1" cubes. On 4 long skewers thread tenderloin cubes, mushroom caps, bacon and green pepper - alternating the ingredients. Brush melted butter over each of the filled skewers and roll in bread crumbs seasoned with seasoned salt and parsley. Place on broiler pan and cook in a 325º oven until browned on all sides (about 15-20 min per side). Serve on a bed of rice.
