2-3/4" thick butterfly chops
4 slices back bacon
2 slices swiss cheese - 1 oz each
1/4 c all purpose flour
Pinch each ground nutmeg and cloves
1 egg well beaten
1/3 cup dry bread crumbs
2 tbsp melted butter
1 tbsp dry vermouth (optional)
lemon slices

Directions:
Directions:
Place chops flat side down between 2 sheets of waxed paper. Pound gently with flat side of meat hammer until size of chops is doubled. Trim fat. Remove waxed paper. Top each chop with a slice of back bacon, swiss cheese and a second piece of back bacon. Fold edges of pork over filling on 3 sides. Starting with folded edge roll up toward unfolded flat edge of meat and secure with toothpicks. Combine flour, nutmeg and cloves. Coat each roll with the flour mixture. Coat with beaten egg and roll in bread crumbs. Combine melted butter and vermouth, if desired. Roll coated rolls in butter mixture. Place rolls on a rack in a shallow baking dish. Bake in a 325º oven 40 min until golden brown and meat is no longer pink. Serve garnished with lemon slices.
