4-1/2" slices boneless pork shoulder
1/2 c flour
1 egg slightly beaten
1 tbsp water
1 1/2 c dry bread crumbs
1/2 tsp salt
1/8 tsp pepper
1/2 c butter

Directions:
Directions:
Pound each slice of pork until thin. Dredge thoroughly in flour. Beat egg with water and dip the floured pork slices in egg mixture then coat with crumbs seasoned with salt and pepper. Place pork on a wire rack and refrigerate for one hour to dry. Heat butter in a large frypan and sauté pork slices until golden brown on both sides. Arrange on a heated serving platter.
