2 c cubed cooked pork
1/2 c chopped onion
1/2 c red pepper sliced
1 c sliced celery
1/2 c salted peanuts
2 1/2 tbsp butter
3 tbsp flour
1 c pork or chicken stock
1 c apple wedges
2 tbsp chopped chutney
2 tsp curry powder
1/4 tsp sugar
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
In a skillet sauté onion, red pepper, celery, and peanuts in butter. Stir in flour then add pork stock. Add chutney, curry, salt, pepper and sugar. Simmer 10 min or until thickened, stirring often. Add the apple wedges and cooked pork and heat thoroughly. Serve with hot rice.
