1/2 c. lime juice
1/3 c. olive oil
1 tsp.sugar
1/4 tsp. crushed red pepper
1 15 to 16 oz can black beans, rinsed
10 oz. canned corn
2 c. lettuce or lightly packed cilantro, chopped ( or half and half)
2 c. grape tomatoes chopped
1 avocado, halved, pitted and chopped
1 green pepper, chopped
1 bunch sliced green pepper
1/2 tsp. kosher salt

Directions:

1. ( Dressing) In a screw-top jar combine lime juice, oil, sugar, kosher salt and crushed red pepper. Shake well to combine.
2. Arrange black beans, corn, lettuce or cilantro, tomatoes,avocado, sweet pepper, and green onions on plates.
3. Drizzle with dressing
