1 lb fresh mushrooms
6 tbsp. butter
2 lb ground beef
1 tsp salt
1/4 tsp pepper
1/2 tsp Worcestershire sauce
1/4 c butter
salt and pepper
2 tsp lemon juice
Pinch dried leaf tarragon

Directions:
Directions:
Remove the stems from mushrooms and chop them finely. Heat the 6 tbsp. butter in skillet and cook the chopped mushroom stems gently 3 minutes. Add them to ground meat along with salt, pepper and Worcestershire sauce. Mix lightly with fork. Shape meat mixture into 4 large patties. Put on rack in broiler pan. Put high under hot broiler and grill until meat is cooked to your liking (5 minutes a side for pink inside). Put on hot serving plates. Heat butter in skillet used earlier for meat. Slice mushroom caps and add to hot butter and cook gently, stirring for 3 minutes. Sprinkle with salt and pepper and stir in lemon juice and tarragon. Spoon over hot meat patties and serve immediately.
