6 tbs butter or oleo
1/3 cup onion, chopped
3 tbs flour
1/2 cup water
8 ounce jar of cheese whiz ( I prefer 1/2 jalapeno and 1/2 regular)
3 eggs, slightly beaten
2 pkgs frozen broccoli thawed and drained well
buttered cracker crumbs

Directions:
Melt 4 tbs butter, add onions and cook until tender and transparent. Add flour and cook a few minutes, stir in water and thicken and remove from stove and stir in cheese whiz. Carefully add broccoli, fold in eggs and pour into a 1 1/2 qt. casserole dish. Melt the remaining 2 tbs butter with cracker crumbs and sprinkle over the top. Bake at 350º F for 30 minutes.
