1 1/2 lbs lean stewing beef in bit sized chunks
2 onions sliced
2 c fresh mushrooms halved
2 tbsp. margarine
1/2 tsp salt
1/4 tsp pepper
1 c beef broth
1 tbsp. corn starch
1 tbsp. tomato paste
1 c sour cream
Leftover vegetables (optional)

Directions:
Directions:
Brown meat and place in bottom of ovenproof casserole. Saute onion and mushrooms in margarine. Add seasonings. Stir corn starch into beef stock. Add to vegetables and simmer until thickened. Add tomato paste. Remove from heat and slowly add sour cream. Pour sauce over meat, cover and bake at 325º for 1 hour then lower heat to 200º and simmer 2 hours longer or until meat is tender adding 1/2 c water in the last hour if sauce has reduced too much. Serve on bed of hot buttered egg noodles, accompanied by a crisp salad. Leftover peas, beans or carrots can go in the stew for the last hour.
