Bean & Bacon Soup Recipe

Ingredients: 8 oz. Bacon 1 c. diced yellow or white onion 1 c. diced carrots 1 c. diced celery 2 cloves garlic, minced 4 c. chicken broth 3 cans 15 oz. Great Northern Beans, drained & rinsed salt & pepper to taste 1 8 oz. can tomato sauce

Directions:1. Cook the bacon in a large soup pot or Dutch Oven Pot until crisp. Remove the bacon with a slotted spoon and place in a paper towel lined plate. Discard all but approx.. 2 tbsp. of the bacon grease.
2. To the remaining bacon grease, add the onions, carrots, celery and cook approximate. 5 minutes or until start to soften. Add the garlic and cook an additional minute. Stir in chicken broth and beans, season to taste with salt and pepper. Bring to a bubble then reduce the heat to low and let the soup simmer for 1 hour with lid on.
3. Remove half of the soup after 1 hour and blend or place in a food processor until smooth. Return the puree to the soup pot and stir in the remaining soup. Add the tomato sauce and 3/4 of bacon ( bite size chunks) and stir into the remaining soup allowing the soup to simmer for approximate. 10-15 mins. Serve topped with remaining bacon. |
